Cavatelli con ragù di tonno

Ricotta pasta with tuna, anchovy and tomato sauce

Cavatelli are like gnocchi, but instead of the dough being made with potatoes (combined with flour and egg), it is done with ricotta.

Serves 4

1 lemon

sea salt and freshly ground black pepper

1 pound, 1½ ounces of fresh tuna, preferably yellowfin or bonito

1 garlic clove, sliced

about 8 mint leaves, cut into strips

about 30 whole black olives in brine

2 tablespoons olive oil

1 medium onion, chopped

4 anchovy fillets in oil

2 tablespoons tomato purée

¾ cup plus 1 tablespoon Tomato sauce

1 ounce plus 1 teaspoon red wine

½ tablespoon sugar
